Ingredients
  

Main Ingredients
  • 1 cup Spicy Dried Chilies (Thai birds eye or arbol) Look for vibrant red chilies that feel firm. Can substitute with cayenne or red pepper flakes.
  • 2 leaves Makrut Lime Leaves (Optional) Use sparingly for depth of flavor.
  • 1 stalk Lemongrass (Optional) Preferably fresh; chop and dry it with the chilies.

Method
 

Preparation
  1. Wash the chilies thoroughly under cold water.
  2. Pat them dry or let them dry completely overnight.
  3. Deseed the chilies if you want to reduce the heat.
Stovetop Method
  1. Heat a dry pot, wok, or skillet over medium heat.
  2. Add the chilies and chopped lime leaves.
  3. Stir frequently for about 5-7 minutes until charred spots form.
Oven Method
  1. Preheat the oven to 300°F (150°C).
  2. Arrange the chilies on a baking sheet and bake for 5-7 minutes.
Grinding
  1. Transfer the dried chilies to a grinder and grind until you achieve desired flake size.
  2. Allow the chili dust to settle before opening the grinder.
Storage
  1. Store in an airtight container in the fridge or freezer.
