Ingredients
  

For the Jam
  • 2 cups fresh or frozen raspberries
  • 2 cups fresh or frozen strawberries, hulled and chopped
  • 1 to 2 tablespoons maple syrup or honey Adjust to taste
  • 2 tablespoons chia seeds Ensure they are fresh
  • 1/2 teaspoon vanilla extract Optional
  • 1 teaspoon lemon juice Optional, enhances flavor

Method
 

Preparation
  1. Place the berries in a small saucepan over medium heat. Stir occasionally, cooking until the fruit breaks down and becomes syrupy, about 5 to 7 minutes.
  2. Remove the pan from heat. Stir in maple syrup or honey to taste, followed by the chia seeds. Mix in the vanilla extract and lemon juice if using.
  3. Let the mixture sit for 10 to 15 minutes to thicken.
  4. Taste the jam and adjust the sweetness or acidity if needed.
  5. Transfer the jam to a clean jar or airtight container. Refrigerate for up to 1 week.

Notes

Keep jam in an airtight container in the fridge. It will last about 1 week. You can freeze it in ice cube trays for longer storage.
