Ingredients
  

Main Ingredients
  • 1 cup packed, finely grated carrots Squeeze out any excess moisture
  • 1/2 cup ricotta cheese Use a good-quality brand for a creamy texture
  • 1 large egg Preferably at room temperature
  • 2 tablespoons wholemeal self-raising flour Ensure it's fresh to avoid bitterness
  • 1/4 teaspoon garlic powder
  • 1 teaspoon dried thyme Or fresh thyme for a more vibrant flavor

Method
 

Preparation
  1. Using a fine grater, grate your carrots and place them into a large mixing bowl.
  2. Add in the ricotta, large egg, self-raising flour, garlic powder, and dried thyme to the bowl. Stir everything together until well combined.
  3. Heat a non-stick skillet over medium heat and lightly spray it with oil.
Cooking
  1. Using a tablespoon, scoop out portions of the mixture and space them out in the skillet. Flatten them slightly.
  2. Cook for about 1 to 2 minutes per side until they are turning golden brown and crisped up.
  3. Enjoy them warm with your favorite dip or plain.

Notes

For the crispiest leftovers, reheat in a skillet or air fryer rather than a microwave. Can be customized with additional veggies or different cheeses.
