Preparation
  1. Preheat your oven to 350°F (175°C) and spray a 9x13-inch baking dish with baking spray.
  2. In a large mixing bowl, stir together the flour, oats, baking soda, baking powder, and salt. Set aside.
  3. In a stand mixer, combine the room-temperature butter and brown sugar. Beat on low speed until smooth and creamy, about 2-3 minutes.
  4. Add the eggs, molasses, and vanilla extract to the mixing bowl and mix until fully incorporated.
  5. Slowly add the dry ingredients to the wet mixture. Mix gently until just combined.
  6. Stir in 1.5 cups of butterscotch chips until evenly distributed.
  7. Transfer the mixture into the prepared baking dish, pressing it evenly into the corners. Sprinkle the remaining 0.5 cup of butterscotch chips on top.
Baking
  1. Bake for 25-30 minutes, or until edges are golden brown and a toothpick inserted comes out with a few moist crumbs.
  2. Allow the bars to cool in the pan for about 15 minutes before drizzling with butterscotch sauce, if desired. Cut into squares and enjoy!

Notes

Store cooled bars in an airtight container at room temperature for up to 5 days or freeze for up to 3 months. For chewier bars, bake for less time.
