Ingredients

For the Chicken Patties
  • 1 pound ground chicken Go for an organic brand for the best flavor
  • 1/2 cup breadcrumbs Panko is recommended for extra crunch
  • 1 large egg At room temperature; helps bind the patties
  • 1 tablespoon fresh rosemary, chopped Don’t skimp; fresh makes all the difference
  • 1 tablespoon lemon zest Freshly grated for maximum flavor
  • 2 tablespoons lemon juice Fresh-squeezed is best!
  • 1 clove garlic, minced The fragrant kind—just a touch adds depth
  • 1/4 cup onion, finely chopped Sweet onion or yellow work beautifully
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil Extra virgin for flavor

Method

Preparation
  1. In a large bowl, combine the ground chicken, breadcrumbs, egg, chopped rosemary, lemon zest, lemon juice, minced garlic, chopped onion, salt, and black pepper.
  2. Using your hands or a spatula, mix gently until everything is evenly distributed. Avoid overmixing to keep the patties tender!
  3. Shape the mixture into 6 to 8 patties, making them about 1 inch thick. Press gently to ensure they hold together.
Cooking
  1. In a large skillet, heat the olive oil over medium heat, ensuring the oil is shimmering but not smoking.
  2. Carefully place the patties in the skillet and cook for 5 to 6 minutes on each side or until they are golden brown and cooked through (internal temperature should reach 165°F).
  3. Let the patties rest for a few minutes after cooking to help the juices redistribute.

Notes

These patties can be served with a crisp salad or roasted vegetables. They also freeze beautifully for future meals.
