Preparation
  1. Ensure your cream cheese is softened for a smooth texture.
  2. In a large bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy (about 1-2 minutes).
  3. Add the sweetened condensed milk and continue beating until fully incorporated (about 2 minutes).
  4. Gradually mix in the key lime juice, lime zest, vanilla extract, and a pinch of salt; beat until smooth (another 1-2 minutes).
Chilling
  1. Transfer the dip into a serving bowl and refrigerate for at least 1 hour.
Serving
  1. Before serving, sprinkle some graham cracker crumbs on top.
  2. Serve with dippers like fresh fruit or additional graham crackers.

Notes

Store leftovers in an airtight container in the fridge for about 3-4 days. This dip can also be made a day ahead for convenience. To thicken the dip, add more softened cream cheese for a denser consistency.
