- Let the wine reduce by half, which should take about 5-7 minutes, until it reaches a slight syrupy consistency.
Cooking
- Once the wine has reduced, lower the heat and slowly stir in the cream. Let it simmer gently, stirring occasionally, until it thickens after about 5 minutes.
- Add the fresh lemon juice, stirring well to combine.
- Remove the saucepan from heat and gradually whisk in the cold butter, one tablespoon at a time, seasoning generously with salt and pepper to taste.
