Ingredients
  

For the Herbal Syrup
  • 1/4 cup sugar Cane sugar is recommended for a cleaner taste.
  • 1/4 cup water Filtered water is best for purer flavors.
  • 1 1/2 teaspoons rosemary Fresh is key; it packs more flavor than dried.
  • 2 teaspoons grated ginger Use fresh ginger for added zing.
For the Spritzer
  • 1 cup white wine A crisp Sauvignon Blanc or Pinot Grigio works great.
  • 4 teaspoons lemon juice Freshly squeezed.
  • 1 teaspoon fresh ginger Grated.
  • 3 teaspoons herb syrup Made from the rosemary syrup.
  • 1/4 cup club soda Sparkling water can be substituted.
  • 1 sprig thyme For garnish.
  • to taste ice cubes Always keep handy.

Method
 

Preparation
  1. In a small saucepan, combine the water, sugar, rosemary, and grated ginger. Heat over medium heat, stirring occasionally until the sugar dissolves—about 2-3 minutes.
  2. Let the syrup sit on low heat for about 10 minutes to allow the herbs to infuse their flavors into the syrup.
Mixing the Spritzer
  1. In a large glass or pitcher, mix the white wine, freshly squeezed lemon juice, the additional grated ginger, and 3 teaspoons of the infused herbal syrup.
  2. Fill glasses with ice cubes and pour the wine mixture over the ice until the glass is about three-quarters full, then top off with club soda.
Serving
  1. Garnish with a sprig of thyme and enjoy your refreshing drink!

Notes

Choose quality ingredients for a better flavor. The herbal syrup can be made a day in advance.
