  • 2 tablespoons soy sauce Opt for low-sodium soy sauce to control salt intake.
Aromatics
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
Thickening Agent
  • 1 tablespoon cornstarch mixed with a splash of water
Cooking Base
  • 1 tablespoon vegetable oil

Method
 

Preparation
  1. Heat the vegetable oil in a heavy-bottomed cast iron skillet over medium heat until it shimmers.
  2. Add the minced garlic and ginger to the pan, sautéing for about 30 seconds until fragrant.
Cooking
  1. Toss in the mixed vegetables, stir-frying for 5-7 minutes until bright and tender-crisp.
  2. In a small bowl, mix the soy sauce and cornstarch with just a splash of water until smooth.
  3. Pour the sauce over the vegetables, stirring well. Cook for another 2-3 minutes until the sauce thickens.
Serving
  1. Serve the Vegetable Chop Suey over chow mein noodles or cooked rice, seasoning with salt and pepper to taste.

Notes
