  • 250 g Mushrooms (fresh, cremini or button) Use high-quality mushrooms for best flavor.
  • 0.5 onion Onion (diced) Opt for organic onions if possible.
  • 1 can Brown lentils (rinsed) Quick and easy; make sure to rinse well!
  • 1 teaspoon Blackstrap molasses Enhances flavor with a hint of sweetness.
  • 1 teaspoon Garlic powder For aromatic kick.
  • 1 teaspoon Dried rosemary Fresh rosemary can be used, but finely chopped.
  • 0.25 teaspoon Allspice Gives the patties an extra flavor boost.
  • 1 tablespoon Tamari soy sauce A gluten-free option for umami flavor.
  • 0.5 cup Almond flour Acts as a binder; substitute with oat flour or breadcrumbs if preferred.
  • 1 cup Chopped apple Sweet and tart apples like Granny Smith work best.

Method
 

Preparation
  1. Preheat your oven to 180C/350F and line a baking tray with baking paper.
  2. In a food processor, combine halved mushrooms and chopped apples until you achieve a consistency similar to ground meat.
  3. Heat a pan over medium-low heat and add the mushroom and apple mixture. Cook for about 8-10 minutes, stirring occasionally, until moisture is almost completely reduced.
  4. Let the mixture cool for a few minutes.
  5. In a large bowl, mix together the cooled mushroom mixture, rinsed lentils, tamari, molasses, rosemary, garlic powder, allspice, and almond flour. Mix well until fully combined.
  6. Shape the mixture into roughly 10 equal-sized patties.
Cooking
  1. Place the patties on the baking tray lined with baking paper. Spritz them with olive oil spray for a golden finish.
  2. Bake in the oven for about 25 minutes until golden brown and firm to the touch.
Serving
  1. Enjoy warm alongside tortillas, sliced cucumbers, tomatoes, leafy greens, avocado, hummus, fresh berries, and walnuts.

Notes

Store leftover patties in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months. You can prepare the mixture a day in advance and store it in the fridge until ready to bake.
