Preparation
- Preheat your oven to 180C/350F and line a baking tray with baking paper.
- In a food processor, combine halved mushrooms and chopped apples until you achieve a consistency similar to ground meat.
- Heat a pan over medium-low heat and add the mushroom and apple mixture. Cook for about 8-10 minutes, stirring occasionally, until moisture is almost completely reduced.
- Let the mixture cool for a few minutes.
- In a large bowl, mix together the cooled mushroom mixture, rinsed lentils, tamari, molasses, rosemary, garlic powder, allspice, and almond flour. Mix well until fully combined.
- Shape the mixture into roughly 10 equal-sized patties.
Cooking
- Place the patties on the baking tray lined with baking paper. Spritz them with olive oil spray for a golden finish.
- Bake in the oven for about 25 minutes until golden brown and firm to the touch.
Serving
- Enjoy warm alongside tortillas, sliced cucumbers, tomatoes, leafy greens, avocado, hummus, fresh berries, and walnuts.
Notes
Store leftover patties in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months. You can prepare the mixture a day in advance and store it in the fridge until ready to bake.
