Ingredients
  

For the Beef
  • 250 g steak (sirloin or ribeye), cut into ¾" cubes Quality matters: Select high-quality beef.
  • 1 Tbsp oyster sauce Can substitute with soy sauce if needed.
  • ½ Tbsp soy sauce
  • ½ Tbsp fish sauce
  • ½ tsp black soy sauce
  • 1 big clove garlic, grated
  • 1 tsp sugar
  • ½ tsp black pepper
  • 2 tsp cooking oil (high smoke point like canola or vegetable)
For Serving
  • 1 handful cherry tomatoes, pierced or julienned bell peppers
  • to taste Pickled red onion (optional, for extra zing)
  • some salad greens for serving

Method
 

Preparation
  1. Prepare the Pickled Onion: Thinly slice a red onion and place it in a jar. In a pot, combine equal parts vinegar and water with a pinch of sugar and salt; bring to a boil, then pour over the onions. Cool and refrigerate for at least 30 minutes.
  2. Marinate the Beef: In a bowl, combine the beef cubes with oyster sauce, soy sauce, fish sauce, sugar, black pepper, and grated garlic. Mix well, cover with plastic wrap, and let marinate for at least 30 minutes (or up to overnight for more flavor).
Cooking
  1. Sear the Beef: Heat the cooking oil in a hot wok or frying pan. Once sizzling, add the marinated beef in a single layer. Sear without stirring for about 30 seconds on each side until browned (3-4 minutes total).
  2. Add Vegetables: Toss in halved cherry tomatoes or julienned bell peppers and sear for an additional 20 seconds. Remove from heat.
Serving
  1. Plate the beef and vegetables over salad greens, garnished with pickled onions for that extra zing.

Notes

This dish is customizable. Add spicy options or use chicken/tofu instead of beef. Best served over jasmine rice or noodles.
