Ingredients
  

Main ingredients
  • 2 cups cooked cauliflower mashed in a colander, squeezing out as much liquid as possible
  • 1/2 cup onion diced
  • 1 cup mushrooms diced, preferably cremini for an earthy flavor
  • 2 large eggs lightly beaten
  • 1 tbsp parsley chopped, or dried
  • 2 tbsp Worcestershire sauce adds a rich umami kick
  • 1 tsp dried basil for a hint of Italian aroma
  • 1/2 tsp salt taste enhancer
  • 1/2 tsp pepper for a little spice
  • 1.5 lb lean ground turkey lower in fat than beef but still flavorful
  • 1/4 cup ketchup for a sweet glaze on top
  • 1/4 cup mustard gives a tangy balance to the sweetness
  • 2 tbsp brown sugar for a hint of caramelized sweetness in the glaze

Method
 

Preparation
  1. Preheat your oven to 400°F (204°C).
  2. Lightly coat a 9" loaf pan with cooking spray.
  3. In a small bowl, whisk together the ketchup, mustard, and brown sugar. Set aside.
  4. In a large bowl, combine the cooked cauliflower, diced onion, diced mushrooms, beaten eggs, parsley, Worcestershire sauce, dried basil, salt, pepper, and ground turkey. Mix well until evenly combined.
  5. Spread the meat mixture evenly in the prepared loaf pan.
Cooking
  1. Bake in the center of the oven for 45 minutes. Remove from the oven and drain excess liquid.
  2. Brush the top generously with the prepared glaze.
  3. Return to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
  4. Remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.

Notes

Make sure the cauliflower is well-drained to prevent a soggy meatloaf. This recipe allows for endless customization; feel free to add cheese, herbs, or different vegetables as desired.
