Preparation
- Preheat your oven to 400°F (204°C).
- Lightly coat a 9" loaf pan with cooking spray.
- In a small bowl, whisk together the ketchup, mustard, and brown sugar. Set aside.
- In a large bowl, combine the cooked cauliflower, diced onion, diced mushrooms, beaten eggs, parsley, Worcestershire sauce, dried basil, salt, pepper, and ground turkey. Mix well until evenly combined.
- Spread the meat mixture evenly in the prepared loaf pan.
Cooking
- Bake in the center of the oven for 45 minutes. Remove from the oven and drain excess liquid.
- Brush the top generously with the prepared glaze.
- Return to the oven and bake for an additional 15 minutes, or until the internal temperature reaches 160°F (71°C).
- Remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
Notes
Make sure the cauliflower is well-drained to prevent a soggy meatloaf. This recipe allows for endless customization; feel free to add cheese, herbs, or different vegetables as desired.
