Tea Ingredients
  • 2 Tbsp Thai tea leaves Look for quality loose leaves for the best flavor.
  • 1 cup off-the-boil water Ideally around 200°F (93°C) for optimal steeping.
Sweetening and Flavoring
  • 4-5 teaspoons sugar Adjust based on your sweetness preference.
  • 1/2 juice juicy lime Freshly squeezed juice is best!
  • Ice For serving.

Method
 

Preparation
  1. Start by placing your 2 tablespoons of Thai tea leaves into a heatproof container or a cloth filter.
  2. Pour 1 cup of off-the-boil water over the leaves. Let them steep for 3-5 minutes until the tea is a deep amber color.
  3. Once steeped, strain the tea through a cloth filter or fine mesh.
  4. While the tea is still warm, add 4-5 teaspoons of sugar. Stir until dissolved.
  5. Let the tea cool for a few minutes, or drop in an ice cube to speed up the process.
  6. Fill a tall glass with ice, then squeeze the juice from half a juicy lime over the ice.
  7. Gently pour the sweetened tea over the ice and lime.
  8. Taste and adjust the lime or sugar to your preference.
  9. Serve right away and enjoy!

Notes

Avoid over-steeping the tea, as it may become bitter. Consider making the tea base ahead of time for convenience.
