- Start by placing your 2 tablespoons of Thai tea leaves into a heatproof container or a cloth filter.
- Pour 1 cup of off-the-boil water over the leaves. Let them steep for 3-5 minutes until the tea is a deep amber color.
- Once steeped, strain the tea through a cloth filter or fine mesh.
- While the tea is still warm, add 4-5 teaspoons of sugar. Stir until dissolved.
- Let the tea cool for a few minutes, or drop in an ice cube to speed up the process.
- Fill a tall glass with ice, then squeeze the juice from half a juicy lime over the ice.
- Gently pour the sweetened tea over the ice and lime.
- Taste and adjust the lime or sugar to your preference.
- Serve right away and enjoy!
Notes
Avoid over-steeping the tea, as it may become bitter. Consider making the tea base ahead of time for convenience.
