Preparation
- Preheat the Air Fryer to 330°F (165°C).
- Grease three mini loaf pans with cooking spray or butter.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, salt, and cinnamon.
- In another bowl, mash the ripe bananas and mix in the granulated sugar.
- Melt the butter, cool it slightly, then whisk it into the banana mixture along with the egg and vanilla extract.
- Fold the banana mixture into the dry ingredients and add the chopped pecans, being careful not to overmix.
Cooking
- Pour the batter evenly into the prepared pans and place them in the air fryer basket.
- Air fry for 20-25 minutes, checking for doneness with a toothpick.
- Let the mini loaves cool in the pans for about 10 minutes before transferring to a wire rack.
Notes
For variations, try adding chocolate chips or substituting the nuts. Store leftovers wrapped tightly at room temperature for 3 days or freeze for 3 months.
