Preparation
  1. Preheat the Air Fryer to 330°F (165°C).
  2. Grease three mini loaf pans with cooking spray or butter.
  3. In a medium bowl, whisk together the dry ingredients: flour, baking soda, salt, and cinnamon.
  4. In another bowl, mash the ripe bananas and mix in the granulated sugar.
  5. Melt the butter, cool it slightly, then whisk it into the banana mixture along with the egg and vanilla extract.
  6. Fold the banana mixture into the dry ingredients and add the chopped pecans, being careful not to overmix.
Cooking
  1. Pour the batter evenly into the prepared pans and place them in the air fryer basket.
  2. Air fry for 20-25 minutes, checking for doneness with a toothpick.
  3. Let the mini loaves cool in the pans for about 10 minutes before transferring to a wire rack.

Notes

For variations, try adding chocolate chips or substituting the nuts. Store leftovers wrapped tightly at room temperature for 3 days or freeze for 3 months.
