- In a small bowl, whisk together the strawberry gelatin and cold water. Let it sit for about 5-10 minutes until it starts to dissolve.
- In a stand mixer, combine the softened cream cheese and mix on medium speed for about 2 minutes until it’s super smooth and creamy.
- Gradually add the confectioners' sugar, dissolved strawberry gelatin, sour cream, and vanilla extract. Mix on low speed for another 2-3 minutes until fully combined and smooth.
- In a separate bowl, beat the heavy whipping cream with an electric mixer on high speed until stiff peaks form, about 3-5 minutes.
- Gently fold the whipped cream into the cream cheese mixture using a spatula, being careful not to deflate the whipped cream.
- Spoon the mousse into serving dishes or glasses. You can serve it immediately for a soft mousse or refrigerate for at least 1 hour to let it set.
Notes
You can make this ahead of time and store it in the fridge for up to two days. To elevate your mousse, consider topping with fresh berries or graham cracker crumbs.
