Preparation
- Preheat your oven to 350°F (175°C) and prepare your baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg, lemon juice, lemon zest, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and baking powder until evenly blended.
- Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes, or until the edges are lightly golden but the centers appear soft.
- Allow to cool on the baking sheet for 3-5 minutes before transferring to a wire rack to cool completely.
- If desired, dust the cool cookies with powdered sugar before serving.
Notes
For best results, do not overmix the dough and ensure the butter is just softened, not melted.
