Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare your baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg, lemon juice, lemon zest, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and baking powder until evenly blended.
  5. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden but the centers appear soft.
  2. Allow to cool on the baking sheet for 3-5 minutes before transferring to a wire rack to cool completely.
  3. If desired, dust the cool cookies with powdered sugar before serving.

Notes

For best results, do not overmix the dough and ensure the butter is just softened, not melted.
