For the Caramelized Onions
  • 4 large yellow onions, thinly sliced Opt for fresh, preferably organic onions for the best flavor.
  • 3 tbsp olive oil or butter Use high-quality extra virgin olive oil for added flavor or unsalted butter for richness.
  • 1 tsp salt Kosher salt is recommended; it dissolves nicely.
  • 1 tsp sugar Optional for extra sweetness; enhances caramelization.
  • 4 cloves garlic, minced Fresh garlic is best; adjust to preference.
  • 1/2 tsp dried thyme Can be replaced with fresh thyme.
  • 1/2 tsp dried rosemary Fresh is fantastic if available.
  • 1/4 cup vegetable broth Helps soften onions during cooking.
For the Pasta
  • 1 lb pasta Choose spaghetti, fettuccine, or penne.
  • 1/2 cup Parmesan cheese, grated Use fresh for optimal flavor.
  • Fresh parsley, chopped For garnish.
  • Salt and pepper to taste

Method
 

Preparation
  1. Thinly slice onions and add them to the slow cooker.
  2. Add olive oil or butter, salt, and optional sugar. Stir well, cover, and cook on low for 8-10 hours.
  3. 30 minutes before completion, add minced garlic, thyme, rosemary, and vegetable broth.
  4. Boil pasta according to package instructions, reserving a cup of pasta water.
  5. Mix the pasta with caramelized onions, adding reserved water as needed for a creamy consistency.
  6. Stir in Parmesan cheese, season with salt and pepper, and garnish with fresh parsley.

Notes

For storage, refrigerate leftovers in an airtight container for up to 4 days. For meal prep, reheat with a splash of broth.
