Ingredients

For the Beef and Sauce
  • 1.5 pounds beef chuck roast, sliced into thin strips Look for well-marbled cuts for tenderness.
  • 1 cup beef broth Homemade or quality store-bought.
  • 0.5 cup low-sodium soy sauce For a milder flavor.
  • 1/3 cup dark brown sugar Adds a lovely caramel note.
  • 1 tablespoon sesame oil Adds that authentic Asian flavor.
  • 3 cloves garlic, minced Fresh is best for a robust taste.
  • 2 tablespoons cornstarch For thickening the sauce.
For the Vegetables
  • 3 cups frozen broccoli florets No need to thaw, super convenient!
For Serving
  • Cooked rice Try jasmine or basmati for extra aroma.

Method

Preparation
  1. In a mixing bowl, whisk together the beef broth, soy sauce, dark brown sugar, sesame oil, and minced garlic to make the sauce.
  2. Place the sliced beef into the slow cooker. Pour the sauce mixture over the beef, and toss to coat evenly.
  3. Cover the slow cooker and set it to low heat for 5-6 hours until the beef is tender.
Thickening the Sauce
  1. In the last 30 minutes of cooking, mix 4 tablespoons of the cooking sauce with cornstarch until smooth. Stir this into the slow cooker to thicken the sauce.
Final Steps
  1. Add the frozen broccoli to the slow cooker in the last 30 minutes to heat through.
  2. Serve the beef and broccoli over a bed of fluffy rice.

Notes

Fresh ingredients yield the best flavors. Allow beef to sit at room temperature for 30 minutes before slicing for tenderness. For a gluten-free option, substitute soy sauce with tamari.
