  • 2 pieces boneless, skinless chicken breasts Cut into bite-sized pieces.
  • 2 medium zucchinis Sliced into half-moons.
  • 1 cup cherry tomatoes Halved. Heirloom varieties are sweeter.
  • ½ piece red onion Thinly sliced.
  • 2 cloves garlic Minced. Fresh garlic for best flavor.
  • 2 tablespoons olive oil Extra virgin olive oil recommended.
Seasoning and Toppings
  • 1 teaspoon dried oregano Classic Mediterranean flavor.
  • ½ teaspoon dried basil Adds aromatic quality.
  • ½ teaspoon smoked paprika For a touch of smokiness.
  • ½ teaspoon salt Adjust to taste.
  • ¼ teaspoon black pepper Adjust to taste.
  • ¼ teaspoon red pepper flakes Optional for heat.
  • ½ cup shredded mozzarella cheese Or swap with feta.
  • ¼ cup grated Parmesan cheese For salty, nutty flavor.
  • 2 tablespoons fresh parsley Chopped, for garnish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
Mix Ingredients
  1. In a large bowl, toss the chicken, zucchini, cherry tomatoes, red onion, and garlic with olive oil, oregano, basil, smoked paprika, salt, pepper, and red pepper flakes until well-coated.
Assemble and Bake
  1. Spread the mixture evenly in the baking dish and sprinkle mozzarella and Parmesan cheeses on top.
  2. Cover loosely with foil and bake for 20 minutes. Remove foil and bake for another 10-15 minutes, until chicken is cooked through and cheese is bubbling.
Serve
  1. Let the dish cool slightly, garnish with parsley, and serve warm with rice, quinoa, or crusty bread.
