- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
Mix Ingredients
- In a large bowl, toss the chicken, zucchini, cherry tomatoes, red onion, and garlic with olive oil, oregano, basil, smoked paprika, salt, pepper, and red pepper flakes until well-coated.
Assemble and Bake
- Spread the mixture evenly in the baking dish and sprinkle mozzarella and Parmesan cheeses on top.
- Cover loosely with foil and bake for 20 minutes. Remove foil and bake for another 10-15 minutes, until chicken is cooked through and cheese is bubbling.
Serve
- Let the dish cool slightly, garnish with parsley, and serve warm with rice, quinoa, or crusty bread.
