  • 1 large egg Ensure the egg is at room temperature for better mixing.
  • 1/4 cup oat flour Check for gluten-free options if necessary.
  • 1 tablespoon flaxseed meal Optional: Adds a healthy dose of omega-3 fatty acids.
  • 1/4 teaspoon turmeric Optional: Enhances flavor and has anti-inflammatory properties.

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. In a large mixing bowl, combine the ground turkey, pumpkin, egg, oat flour, and flaxseed meal. If using, add the turmeric. Mix well with your hands until fully combined.
  3. Form 1-inch meatballs using a spoon or cookie scoop, spacing them about an inch apart on the baking sheet.
  4. Bake for about 15-20 minutes, until fully cooked and slightly golden. Check that meatballs reach an internal temperature of 165°F.
  5. Allow to cool completely before serving. Store leftovers in an airtight container in the fridge for up to a week or freeze for up to 3 months.
