Preparation
- If using fresh salmon, cook it and then flake it into small pieces. If using canned salmon, drain and flake.
- In a large bowl, mix the flaked salmon, breadcrumbs, beaten egg, chopped onion, parsley, lemon juice, salt, and pepper until well combined.
- Shape mixture into patties about 1 inch thick.
Cooking
- Heat oil in a heavy skillet over medium heat. Cook patties for about 4-5 minutes on each side until golden brown.
Serving
- Serve the salmon patties on fresh lettuce leaves or in mini brioche buns with a dollop of homemade tartar sauce and a lemon wedge.
