Preparation
  1. In a large bowl, combine the ground chicken, breadcrumbs, egg, chopped rosemary, lemon zest, lemon juice, minced garlic, chopped onion, salt, and black pepper.
  2. Make sure your chicken is at room temperature for even mixing.
Mixing
  1. Using your hands, gently mix until all ingredients are evenly distributed and the mixture holds together well. Avoid overmixing to maintain a tender texture.
Shaping Patties
  1. Divide the mixture into 6 to 8 equal portions. Shape into patties about 1 inch thick.
Cooking
  1. Heat the olive oil in a skillet over medium heat until shimmering.
  2. Cook the patties for about 5 to 6 minutes on each side until golden brown and cooked through.
  3. Ensure the patties reach an internal temperature of 165°F (75°C).
Serving
  1. Remove the patties from the skillet and let them rest for a few minutes before serving.
