Ingredients

For the Skewers
  • 2 pieces boneless chicken fillets Choose free-range for better texture and flavor. (Brand recommendation: Sprouts Organic)
  • 1 cup cherry tomatoes Look for ripe, sweet varieties.
  • 1 piece zucchini Opt for fresh, firm zucchinis for the best grilling experience.
  • 1 piece bell pepper Any color works! I love using red for its sweetness.
  • 2 tablespoons olive oil Use extra virgin for a richer taste. (Brand recommendation: California Olive Ranch)
  • 1 teaspoon garlic powder This adds a delightful kick, but fresh minced garlic is even better.
  • to taste salt and pepper A must-have for flavor seasoning.
  • 2 tablespoons fresh basil, chopped Perfect for a fragrant, flavorful finish.

Method

Preparation
  1. Prepare Your Campfire: Start your campfire, allowing it to burn down to glowing embers—about 20-30 minutes.
  2. Mix the Marinade: In a bowl, whisk together the olive oil, garlic powder, salt, and pepper.
  3. Coat Chicken & Veggies: Add chicken fillets and vegetables to the bowl. Toss until everything is well coated.
  4. Skewer It Up: Assemble your chicken and veggies onto soaked skewers, alternating for a colorful presentation.
Cooking
  1. Grill the Skewers: Place the skewers over your campfire. Grill for about 8-10 minutes, turning occasionally until charred and cooked through.
  2. Finish & Serve: Remove skewers from heat and sprinkle fresh basil on top. Serve warm.

Notes

Leftovers can be stored in an airtight container for about 2-3 days. Marinate chicken and veggies a few hours or overnight for enhanced flavors. Consider adding crusty bread or a simple salad to complete the meal.
