Preparation
  1. Begin by toasting the whole grain bread slices until golden brown. This should take about 3-4 minutes in a toaster.
  2. While the bread is toasting, heat a non-stick skillet over medium heat and prepare eggs to your liking (scrambled, poached, or fried).
  3. Slice the avocado in half, deseed, and carefully scoop the flesh out with a spoon. Slice it lengthwise and sprinkle with a touch of salt and pepper.
  4. On a beautiful serving tray, carefully arrange the toasted bread. Place your eggs atop the toast, followed by fresh avocado slices.
  5. Arrange a generous handful of mixed berries alongside the toast and eggs.
  6. Pour fresh coffee into your favorite mugs, and add honey to taste.
  7. Garnish with fresh mint leaves for an aromatic finish.

Notes

For added flavor, sprinkle the eggs with a pinch of smoked paprika or fresh herbs before serving. Store any leftovers in the refrigerator for up to 2 days.
