Preparation
- Begin by toasting the whole grain bread slices until golden brown. This should take about 3-4 minutes in a toaster.
- While the bread is toasting, heat a non-stick skillet over medium heat and prepare eggs to your liking (scrambled, poached, or fried).
- Slice the avocado in half, deseed, and carefully scoop the flesh out with a spoon. Slice it lengthwise and sprinkle with a touch of salt and pepper.
- On a beautiful serving tray, carefully arrange the toasted bread. Place your eggs atop the toast, followed by fresh avocado slices.
- Arrange a generous handful of mixed berries alongside the toast and eggs.
- Pour fresh coffee into your favorite mugs, and add honey to taste.
- Garnish with fresh mint leaves for an aromatic finish.
Notes
For added flavor, sprinkle the eggs with a pinch of smoked paprika or fresh herbs before serving. Store any leftovers in the refrigerator for up to 2 days.
