  • 2 slices whole-grain bread Choose a hearty bread for added flavor.
  • 1 tablespoon olive oil Use high-quality extra virgin for best flavor.
  • Salt & Pepper To taste.

  1. In a medium nonstick skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Toss in 1 cup of fresh spinach and 1/2 cup of halved cherry tomatoes, sauté for about 3 minutes until spinach wilts.
  3. Carefully crack 2 large eggs into the pan and cook for about 4-5 minutes until the whites are set.
  4. Toast the 2 slices of whole-grain bread until golden brown.
  5. Sprinkle 1/4 cup of crumbled feta cheese over the eggs and season with salt and pepper.
  6. Serve the eggs and vegetables on a plate alongside the toast.

Notes
