- In a medium nonstick skillet, heat 1 tablespoon of olive oil over medium heat.
- Toss in 1 cup of fresh spinach and 1/2 cup of halved cherry tomatoes, sauté for about 3 minutes until spinach wilts.
- Carefully crack 2 large eggs into the pan and cook for about 4-5 minutes until the whites are set.
- Toast the 2 slices of whole-grain bread until golden brown.
- Sprinkle 1/4 cup of crumbled feta cheese over the eggs and season with salt and pepper.
- Serve the eggs and vegetables on a plate alongside the toast.
