- In a small saucepan, combine the water, sugar, rosemary, and grated ginger. Heat over medium heat, stirring occasionally until the sugar dissolves, about 2-3 minutes.
- Let the syrup sit on low heat for about 10 minutes to infuse the flavors of the herbs.
Assembly
- In a large glass or pitcher, mix the white wine, lemon juice, and herbal syrup. Adjust ginger as per taste.
- Fill your glasses with ice cubes, pour the wine mixture over the ice until three-quarters full, and top off with club soda.
Garnishing
- Add a sprig of thyme on top and enjoy your refreshing drink.
Notes
This spritzer can be customized with different fruits and herbs. The herbal syrup can be made ahead and stored in the fridge for up to a week.
