Ingredients

For the tea
  • 2 Tbsp Thai tea leaves Look for quality loose-leaf Thai tea for the best flavor. Brands like ChaTraMue or Thai Tea Direct work wonderfully—skip the tea bags!
  • 1 cup off-the-boil water Water just off the boil extracts the flavors beautifully.
  • 4-5 teaspoons sugar This can be adjusted depending on your sweetness preference. I recommend using raw cane sugar for a richer flavor.
For serving
  • Juice from half lime Freshly squeezed lime juice brightens the drink. Use more if you love a zesty punch!
  • Ice Serve your tea over ice for that perfect chilled experience.

Method

Preparation
  1. Begin by placing the Thai tea leaves in a heatproof container.
  2. Pour the off-the-boil water over the leaves and let them steep for 3-5 minutes.
  3. Carefully strain the tea through a fine mesh sieve or cheesecloth to extract the liquid, discarding the spent leaves.
  4. While the tea is still warm, add the sugar and stir until dissolved.
  5. Allow the tea to cool to room temperature or toss it in the fridge for a faster chill.
  6. Squeeze the juice from half a lime directly into a glass filled with ice.
  7. Pour your sweetened tea over the lime juice and give it a gentle stir to combine.
  8. Sip your delicious Refreshing Thai Lime Tea immediately.
  9. Feel free to garnish with extra lime wedges or mint leaves for a beautiful finish.

Notes

Use filtered water for the best taste. Avoid oversteeping the tea, as it can become bitter. Experiment with different types of limes as the seasons change.
