  • 3 cups dried sorrel (hibiscus) Choose high-quality dried sorrel from your local grocery store or an ethnic market for the best flavor.
  • 0.75 pounds fresh ginger, grated Freshly grated ginger is a must for the robust flavor; avoid powdered options for the best results.
  • 10 whole cloves Make sure they are fresh for optimal flavor.
  • 10 whole allspice berries A little goes a long way; they lend a fragrant aspect.
  • 2.5 cups sugar Adjust to taste; honey or a sugar substitute can be used.
  • 6 cups water Filtered water is recommended for purest taste.

Preparation
  1. In a large pot, bring about 6 cups of water to a rapid boil.
  2. Once boiling, add the dried sorrel, grated ginger, whole cloves, and allspice berries. Allow it to boil vigorously for 8 minutes.
  3. Remove from the heat and let the mixture cool.
  4. Transfer the cooled mixture to the refrigerator and allow to chill for at least 8 hours, or overnight.
  5. After chilling, strain the liquid into a pitcher using a fine mesh strainer.
  6. In a small saucepan over medium heat, combine 1 cup of water and 1 cup of sugar. Stir until the sugar dissolves completely, and set aside to cool.
  7. Mix the chilled sorrel liquid with the simple syrup, adjusting sweetness to taste. Serve it over ice.

Notes

Store your finished sorrel drink in an airtight container in the fridge for up to a week. Can be frozen for up to 3 months. Feel free to adjust the recipe to your taste; for an adult version, consider adding rum.
