  • 4 pieces Cod fillets, about 4 to 6 ounces each
  • 2 teaspoons Olive oil or melted butter Per fillet
  • 1 whole Fresh lemon Both zest and juice
  • 1 teaspoon Garlic, minced or powdered
  • 1 teaspoon Paprika, sweet or smoked
  • to taste Salt and pepper
  • optional Chili flakes, parsley, dill For additional flavor

Method
 

Preparation
  1. Preheat the oven to 425°F. Pat the cod fillets dry with paper towels.
  2. Place the fillets on a lined sheet pan. Rub each fillet with 1 to 2 teaspoons of olive oil.
  3. Season with salt, pepper, garlic, and paprika. Zest half a lemon over the top and squeeze a little juice.
Cooking
  1. Bake for 10 to 12 minutes, depending on thickness, until the fish flakes easily with a fork.
  2. For thicker pieces, add an additional minute or two.
  3. For a crispy top, switch to broil for the last 60 seconds, watching closely.

Notes

For best results, use high heat and avoid overcrowding the pan. You can use frozen cod; bake for 15 to 18 minutes and ensure to dry it properly before seasoning. Serve with lemon wedges and herbs for a fresh presentation.
