Preparation
- Preheat the oven to 375°F (190°C).
- Grease and line a loaf pan with parchment paper.
- In a bowl, whisk together the flour, pumpkin pie spice, baking soda, and salt.
- In another bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
- Gradually add the dry mixture to the wet ingredients and stir just until combined.
- Scrape the batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
- Place in the preheated oven and bake for 50-55 minutes.
- Cover the top with foil halfway through baking to prevent over-browning.
- Check doneness by inserting a toothpick into the center; it should come out clean.
Cooling
- Allow the bread to cool in the pan for 10 minutes before transferring to a cooling rack.
