Preparation
- Preheat the oven to 400°F.
- Prepare your baking sheet by lining it with parchment paper or spraying lightly with cooking oil.
- Remove the stems from the portobello mushrooms and set aside for another recipe.
- Arrange the mushrooms on the sheet, stem-side up.
- Stuff each mushroom with 2-3 tablespoons of pizza sauce, a halved basil leaf, and two slices of pepperoni.
- Generously sprinkle grated mozzarella cheese over each stuffed mushroom.
Cooking
- Bake in the center of the oven for 15-20 minutes or until the cheese is bubbling and golden brown.
Serving
- Remove from the oven, garnish with freshly chopped parsley, and cool for a couple of minutes before serving.
Notes
For an extra kick, sprinkle red pepper flakes over the cheese before baking. Store any leftovers in an airtight container in the fridge for up to three days. Bake from frozen at 400°F for 25 minutes.
