Mushroom Caps
  • 8 medium medium portobello mushrooms Make sure they are fresh and unblemished for the best results.
Stuffing
  • 1/2 cup pizza sauce Opt for high-quality brands like Rao’s or make your own for a fresher, homemade flavor.
  • 8 pieces basil leaves Using fresh basil adds a bright flavor.
  • 16 slices pepperoni Feel free to replace with turkey or plant-based options for a healthier choice.
  • 2 cups mozzarella cheese (grated) Choose fresh mozzarella for better melt.
  • 2 tablespoons parsley (chopped) Fresh parsley adds a lovely garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F.
  2. Prepare your baking sheet by lining it with parchment paper or spraying lightly with cooking oil.
  3. Remove the stems from the portobello mushrooms and set aside for another recipe.
  4. Arrange the mushrooms on the sheet, stem-side up.
  5. Stuff each mushroom with 2-3 tablespoons of pizza sauce, a halved basil leaf, and two slices of pepperoni.
  6. Generously sprinkle grated mozzarella cheese over each stuffed mushroom.
Cooking
  1. Bake in the center of the oven for 15-20 minutes or until the cheese is bubbling and golden brown.
Serving
  1. Remove from the oven, garnish with freshly chopped parsley, and cool for a couple of minutes before serving.

Notes

For an extra kick, sprinkle red pepper flakes over the cheese before baking. Store any leftovers in an airtight container in the fridge for up to three days. Bake from frozen at 400°F for 25 minutes.
