Preparation
- Preheat your oven to 350°F (175°C). Grease two loaf pans with butter and dust lightly with sugar.
- In a large bowl, whisk together the pumpkin puree, eggs, vegetable oil, granulated sugar, and dark brown sugar until smooth.
- In another bowl, mix together the flour, pumpkin spice mix, baking powder, baking soda, and salt. Sift to eliminate lumps.
- Slowly add the dry ingredients to the wet mixture, stirring gently until just incorporated. Avoid overmixing.
Baking
- Divide the batter evenly between the prepared loaf pans. Optionally, sprinkle more sugar on top before baking.
- Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and allow cooling in the pans for 15 minutes before transferring to a wire rack.
