  • 1 cup granulated sugar Adds sweetness.
  • 1/2 cup dark brown sugar Adds moisture and depth of flavor.
  • 1 teaspoon vanilla extract Add a splash of quality vanilla for warmth.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease two loaf pans with butter and dust lightly with sugar.
  2. In a large bowl, whisk together the pumpkin puree, eggs, vegetable oil, granulated sugar, and dark brown sugar until smooth.
  3. In another bowl, mix together the flour, pumpkin spice mix, baking powder, baking soda, and salt. Sift to eliminate lumps.
  4. Slowly add the dry ingredients to the wet mixture, stirring gently until just incorporated. Avoid overmixing.
Baking
  1. Divide the batter evenly between the prepared loaf pans. Optionally, sprinkle more sugar on top before baking.
  2. Bake for 60-65 minutes, or until a toothpick inserted in the center comes out clean.
  3. Remove from the oven and allow cooling in the pans for 15 minutes before transferring to a wire rack.
