Vegetables
  • 1 cup Grilled Vegetables (zucchini, bell peppers, eggplant) Feel free to substitute with your favorite veggies!
  • 1 whole Avocado Purchase ripe avocados for the best texture.
  • 1 cup Fresh Fruits & Veggies (apples, cucumbers, tomatoes, lettuce) Enhances taste and provides refreshing textures.
Proteins
  • 1 cup Grilled Chicken You can swap in rotisserie chicken for quick prep.
  • 1 cup Mozzarella Cheese Fresh mozzarella offers a milky, soft bite that melts beautifully.
  • 1/2 cup Feta Cheese Crumbled feta adds a salty zing to Mediterranean-style sandwiches.
  • 1/2 cup Chickpeas Toss them with pecans for a crunchy salad filling that's full of protein.
  • 1/4 cup Pecans Adds a nice crunch when mixed with chickpeas.

Method

Preparation
  1. Spread Nutella generously between two shortbread cookies to create a decadent dessert.
  2. Slice a watermelon into thick pieces, layer with greens, and assemble like a sandwich.
  3. Grill your chicken breast until cooked, about 6-7 minutes per side. Slice and combine with mashed avocado, then layer between toasted bread with melted mozzarella.
  4. Toss sliced zucchini and bell peppers with olive oil, salt, and pepper, then grill for about 4-5 minutes until they are tender. Layer the veggies and mozzarella on toasted bread.
  5. Cook your favorite meat (think pulled pork or chicken) and mix it with BBQ sauce. Load onto bread with crunchy slaw or pickles.
  6. Spread hummus on your choice of bread, top with sliced cucumbers, tomatoes, and crumbled feta. Drizzle with olive oil.
  7. Combine mashed chickpeas, diced apples, and chopped pecans with a bit of mayo and mustard. Spread between slices of bread.
  8. Mash chickpeas with spices and a dollop of yogurt. Spread as you would with traditional egg salad.
  9. Lay down slices of cucumber and tomatoes, seasoned with salt and pepper.
Serving
  1. Serve and enjoy! Pack them for a picnic or serve them for lunch at home.

Notes

Storage: Store sandwiches in an airtight container to maintain freshness. Eat within 2-3 days. For optimal crunchiness, prep individual ingredients ahead of time. Be careful not to oversaturate bread with wet ingredients. This can ruin the sandwich's integrity.
