  • 3 cups Rice Krispies cereal Look for the original brand for the best crunch. Gluten-free options are available if needed.
  • 1 cup peanut butter Creamy peanut butter works best. Jif or Skippy recommended.
  • 1 cup marshmallows Mini marshmallows melt quickly, regular marshmallows can be chopped.
  • 3 tablespoons unsalted butter Use room temperature butter for easy melting. Land O’Lakes preferred.
  • 1 cup chocolate chips Semi-sweet or dark chocolate chips recommended (Guittard or Ghirardelli).
  • 1 tablespoon vegetable oil Helps the chocolate melt smoothly; can use canola or coconut oil.

Preparation
  1. In a large pot, melt the unsalted butter, marshmallows, and peanut butter over low heat, stirring continuously until smooth and creamy (about 3-5 minutes).
  2. Remove the pot from heat and immediately fold in the Rice Krispies until fully coated.
  3. Grease an 8x8 inch baking dish with a little butter or cooking spray. Transfer the mixture and press it down firmly and evenly.
  4. In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring in between, until smooth and glossy (about 1-2 minutes).
  5. Drizzle the melted chocolate over the pressed Rice Krispie mixture. Use a knife to gently swirl the chocolate into the treats.
  6. Allow the treats to cool completely at room temperature. Once set (about 30 minutes), slice into squares and enjoy.

Notes

These treats are best stored in an airtight container at room temperature for up to a week. You can make them a day in advance.
