Preparation
  1. Preheat the oven to 350°F (175°C). Line a large cookie sheet with parchment paper.
  2. In a mixing bowl, whisk the eggs until lightly beaten. Add peanut butter and maple syrup. Stir until smooth.
  3. In another bowl, combine rolled oats, baking soda, ground cinnamon, and sea salt. Mix well.
  4. Slowly add the dry mixture to the wet ingredients, stirring until a thick dough forms. Fold in chocolate chips.
  5. Drop mounds of dough onto the prepared cookie sheet, spacing them about 2 inches apart.
  6. Bake for 9-12 minutes, until edges are firm. Check around the 10-minute mark for large cookies.
  7. Allow cookies to cool on the sheet for 10 minutes before transferring to a wire rack.
