- Preheat the oven to 350°F (175°C). Line a large cookie sheet with parchment paper.
- In a mixing bowl, whisk the eggs until lightly beaten. Add peanut butter and maple syrup. Stir until smooth.
- In another bowl, combine rolled oats, baking soda, ground cinnamon, and sea salt. Mix well.
- Slowly add the dry mixture to the wet ingredients, stirring until a thick dough forms. Fold in chocolate chips.
- Drop mounds of dough onto the prepared cookie sheet, spacing them about 2 inches apart.
- Bake for 9-12 minutes, until edges are firm. Check around the 10-minute mark for large cookies.
- Allow cookies to cool on the sheet for 10 minutes before transferring to a wire rack.
