Ingredients
  

For the Custard
  • 4 large eggs, at room temperature Room temperature eggs create a better custard mixture.
  • 1.25 cups whole milk Can be substituted with almond or oat milk for a dairy-free version.
  • 2 tablespoons granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon cinnamon
  • 1/8 teaspoon kosher salt
For the French Toast
  • 12 slices brioche bread (or any bread of your choice) Brioche is preferred for its sweet, rich flavor.
  • 3/4 cup creamy peanut butter Choose a quality brand like Jif or Smucker’s.
  • 1/4 cup raspberry jam (or your favorite flavor) Feel free to substitute with different jelly flavors.
Optional Toppings
  • maple syrup Real maple syrup is recommended.
  • creamy peanut butter (melted)
  • fresh fruit like berries or bananas

Method
 

Preparation
  1. Preheat your griddle to 350-375°F. Lightly grease if it's not non-stick.
  2. In a shallow bowl, whisk together the eggs, whole milk, granulated sugar, vanilla extract, cinnamon, and salt until smooth and slightly frothy.
  3. Spread about 2 tablespoons of peanut butter on 6 slices of brioche, and 2 teaspoons of jelly on the other 6 slices to create sandwiches.
  4. Dip each sandwich into the custard mixture, coating all sides evenly, and allow excess to drip off.
Cooking
  1. Place the sandwiches on the preheated griddle and cook for 2-4 minutes on each side or until golden brown.
  2. Serve hot, topped with your choice of maple syrup, melted peanut butter, or fresh fruit.

Notes

Avoid over-soaking the bread to prevent soggy texture. Using day-old bread is recommended for better absorption.
