Preparation
- Line an 8x8-inch baking dish with parchment paper, allowing it to hang over the edges.
- In a medium bowl, combine crushed honey graham crackers and granulated sugar. Mix thoroughly.
- Pour in melted butter and stir until fully combined; press firmly into the bottom of the lined dish.
- In a large bowl, beat cream cheese, confectioners' sugar, and vanilla extract until creamy. Fold in 2 cups of whipped topping until smooth.
- Divide the cream cheese mixture into two bowls. To one bowl, add peach jello mix and mix gently.
- Fold in 1 cup of diced peaches into the peach-flavored bowl.
Assembly
- Spread the peach mixture evenly over the crust.
- Top with the remaining cream cheese mixture, smoothing it out.
- Spread the remaining whipped topping on top.
Chill and Serve
- Place the dish in the refrigerator for at least 1 hour; for best results, let it sit overnight.
- When ready to serve, top with reserved diced peaches.
