Ingredients
  

For the crust
  • 2 cups finely crushed honey graham crackers Honey Maid recommended for sweetness.
  • 1 tablespoon granulated sugar Enhances the crust's sweetness.
  • 1/2 cup unsalted butter, melted Ensure it’s at room temperature.
For the filling
  • 2 blocks cream cheese, room temperature Opt for Philadelphia for creamy texture.
  • 1 cup confectioners' sugar Powdered sugar gives smooth consistency.
  • 2 teaspoons vanilla extract Pure vanilla is best.
  • 3 cups whipped topping, divided Cool Whip recommended.
  • 1 box peach jello mix The key flavoring ingredient.
  • 1 can sliced peaches in fruit juice, drained and diced, divided Del Monte or Dole for quality; fresh if in season.

Method
 

Preparation
  1. Line an 8x8-inch baking dish with parchment paper, allowing it to hang over the edges.
  2. In a medium bowl, combine crushed honey graham crackers and granulated sugar. Mix thoroughly.
  3. Pour in melted butter and stir until fully combined; press firmly into the bottom of the lined dish.
  4. In a large bowl, beat cream cheese, confectioners' sugar, and vanilla extract until creamy. Fold in 2 cups of whipped topping until smooth.
  5. Divide the cream cheese mixture into two bowls. To one bowl, add peach jello mix and mix gently.
  6. Fold in 1 cup of diced peaches into the peach-flavored bowl.
Assembly
  1. Spread the peach mixture evenly over the crust.
  2. Top with the remaining cream cheese mixture, smoothing it out.
  3. Spread the remaining whipped topping on top.
Chill and Serve
  1. Place the dish in the refrigerator for at least 1 hour; for best results, let it sit overnight.
  2. When ready to serve, top with reserved diced peaches.

Notes

This dessert can be prepped ahead of time and stored in the fridge for up to 3 days. Make sure to keep it chilled to maintain texture.
