Ingredients
  

For the Tea
  • 5-6 leaves Pandan Leaves Fresh is best for the most intense flavor.
  • 2 stalks Lemongrass Use firm, fresh stalks for maximum aroma and flavor.
  • 1.5 liters Water Filtered water is preferred for clarity in taste.
  • Sugar or Simple Syrup Adjust according to your sweetness preference.
For the Jelly
  • 6 leaves Pandan Leaves Fresh is optimal for the jelly.
  • 1.5 cups Water Filtered water is recommended for color.
  • 1.5 teaspoons Agar Agar Powder A great plant-based gelling agent.
  • 3-4 tablespoons Sugar Sweeten to taste, as it complements the pandan flavor beautifully.

Method
 

To Make the Tea
  1. In a large pot, add 1.5 liters of water and set it on high heat.
  2. Tie 5-6 pandan leaves into knots to enhance infusion.
  3. Bruise the lemongrass and chop into 1-inch pieces, then add to the pot.
  4. Bring to a boil, lower the heat, and simmer for 15-20 minutes.
  5. Strain the tea into a pitcher, discarding the pandan and lemongrass pieces, and allow to cool completely.
To Make the Jelly
  1. Blend 6 pandan leaves with 1.5 cups of water until smooth.
  2. Strain the blended mixture into a pot, discarding the pulp.
  3. Whisk in 1.5 teaspoons of agar agar powder and heat while stirring until it reaches a boil.
  4. Stir in 3-4 tablespoons of sugar until dissolved.
  5. Pour the mixture into a jelly mold or container and let it set at room temperature.
  6. Cut the jelly into small cubes once set.
Combine and Chill
  1. Stir jelly cubes into the cooled pandan tea and chill in the refrigerator.
  2. Serve in glasses filled with ice and enjoy.

Notes

Quality ingredients matter. Store leftover tea in an airtight container for up to 3 days. The jelly can last about a week stored properly.
