Ingredients

Main Ingredients
  • 1/4 cup chia seeds These tiny seeds are the base and bring a delightful texture.
  • 1 cup almond milk Unsweetened for a lighter option, or use coconut milk for a tropical flavor.
  • 1/4 cup lemon juice Freshly squeezed is preferable to capture that zesty brightness!
  • 2 tablespoons maple syrup For natural sweetness; feel free to adjust depending on your palate.
  • 1 teaspoon vanilla extract This elevates the flavor profile beautifully.
  • 1/4 cup Greek yogurt Use full-fat for a creamier texture or low-fat for a lighter option.
  • 1 tablespoon lemon zest Optional: A little sprinkle adds extra zing and fragrance.

Method

Preparation
  1. In a mixing bowl, combine chia seeds.
  2. In another bowl, whisk together almond milk, lemon juice, maple syrup, vanilla extract, and Greek yogurt.
  3. Pour the creamy liquid mixture over the chia seeds and stir well to prevent clumping.
  4. If using lemon zest, gently fold it in now for that extra citrus burst.
  5. Transfer your mix to a storage jar with a lid and refrigerate overnight (or at least for 4 hours).
  6. Give it a good stir before serving, and enjoy your pudding topped with fresh fruit or nuts.

Notes

For the best flavor, use organic lemons and high-quality maple syrup. Store in an airtight container in the fridge for up to 5 days. Adjust sweetness to taste.
