  • 1 medium head cauliflower, cut into florets Choose a fresh, firm head.
  • 2 pieces eggs (room temperature) Can substitute with flax eggs.
  • 1 cup crushed brown rice crackers or almond meal Panko breadcrumbs work well if not gluten-sensitive.
  • 1 cup fresh orange juice
  • 1 tablespoon orange zest
  • 2 tablespoons tamari soy sauce or coconut aminos
  • 2 tablespoons apple cider vinegar or rice vinegar
  • 3 tablespoons honey or maple syrup Can choose based on dietary preference.
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 2 tablespoons arrowroot flour (or tapioca flour)
  • to taste sesame seeds for garnish

Method
 

Preparation
  1. Preheat your oven to 220°C (425°F) and line a baking tray with baking paper.
  2. Chop the cauliflower into medium bite-sized florets.
  3. In a medium bowl, whisk together the eggs until well combined.
  4. In a second bowl, add your choice of breadcrumbs.
  5. Dip each cauliflower piece into the egg mixture, letting any excess drip off, then coat in the breadcrumb mixture.
Baking
  1. Place the coated cauliflower on the baking sheet and bake for 25 minutes.
  2. Turn the trays around halfway through to ensure even cooking.
Glaze Preparation
  1. In a small saucepan, combine the fresh orange juice, orange zest, tamari, apple cider vinegar, honey (or maple syrup), ground ginger, and garlic powder. Bring to a gentle boil.
  2. In a small bowl, mix the arrowroot flour with 2 tablespoons of water, and once the sauce is boiling, add it while reducing the heat. Simmer until thickened (about 2-3 minutes).
Final Touch
  1. Toss the baked cauliflower in the orange sesame glaze until each piece is beautifully coated.
  2. Sprinkle with sesame seeds and enjoy immediately.

Notes

Best consumed fresh. Store leftovers in an airtight container for up to 3 days in the refrigerator.
