Preparation
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together the salt, pepper, chili powder, cumin, and garlic powder.
- Cut the chicken breast into bite-sized pieces.
Cooking
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Add the seasoned chicken pieces to the skillet. Cook until browned on all sides, about 5-7 minutes.
- Stir in the rice, chicken broth, black beans, corn, and salsa. Bring the mixture to a simmer.
- Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.
- Bake for 25-30 minutes or until the rice is cooked and has absorbed most of the liquid.
- Remove the skillet from the oven and sprinkle shredded cheddar cheese evenly over the top.
- Return the skillet to the oven for another 5 minutes, or until the cheese is beautifully melted and bubbly.
Serving
- Garnish the chicken burrito bowl with sliced avocado, lime slices, and fresh cilantro.
