  • 1 pound chicken breast (boneless and skinless preferred) Can cube for quicker cooking or use leftover rotisserie chicken.
  • 1 tablespoon olive oil (extra virgin for better flavor)
  • 1 teaspoon salt (Himalayan or sea salt recommended) Adds depth.
  • 1 teaspoon pepper (freshly cracked) For a fresher taste.
  • 1 teaspoon chili powder Use smoky or regular, depending on your preference.
  • 1 teaspoon cumin (ground) For an earthy flavor.
  • 1 teaspoon garlic powder Adds savory richness.
  • 1 cup rice (white or brown) Brown rice will take longer to cook.
  • 1 cup chicken broth Homemade is ideal, but low-sodium store-bought works.
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels Fresh, frozen, or canned works.
  • 1 cup salsa Choose your favorite brand, or homemade.
  • 1 cup shredded cheddar cheese (optional) Use pepper jack for spice.
  • 1 each avocado, sliced Ripe for creaminess.
  • 1 each lime, sliced Adds a zesty finish.
  • 1 each Fresh cilantro, for garnish (optional) Adds freshness.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix together the salt, pepper, chili powder, cumin, and garlic powder.
  3. Cut the chicken breast into bite-sized pieces.
Cooking
  1. In a large oven-safe skillet, heat olive oil over medium-high heat.
  2. Add the seasoned chicken pieces to the skillet. Cook until browned on all sides, about 5-7 minutes.
  3. Stir in the rice, chicken broth, black beans, corn, and salsa. Bring the mixture to a simmer.
  4. Cover the skillet with a lid or aluminum foil and transfer it to the preheated oven.
  5. Bake for 25-30 minutes or until the rice is cooked and has absorbed most of the liquid.
  6. Remove the skillet from the oven and sprinkle shredded cheddar cheese evenly over the top.
  7. Return the skillet to the oven for another 5 minutes, or until the cheese is beautifully melted and bubbly.
Serving
  1. Garnish the chicken burrito bowl with sliced avocado, lime slices, and fresh cilantro.

Notes
