Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats and chia seeds.
  3. Add in water, salt, and baking powder, and stir until well combined.
  4. Allow the mixture to sit for about 10 minutes to thicken.
  5. Grease your loaf pan with butter or non-stick spray.
  6. Pour the thickened mixture into the greased loaf pan and smooth the top.
  7. Bake for 30-35 minutes until firm and golden brown.
  8. Allow the loaf to cool for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container for 3-4 days at room temperature or up to a week in the fridge. Can be frozen for up to 3 months. Avoid over-mixing to keep the bread fluffy.
