Ingredients
  

For the crust
  • 1.5 cups 1 1/2 cups graham cracker crumbs Feel free to use store-bought or make your own.
  • 0.5 cups 1/2 cup unsalted butter, melted Make sure it’s at room temperature for easier mixing.
For the filling
  • 8 ounces 8 ounces cream cheese, room temperature I prefer Philadelphia brand for its smooth texture.
  • 14 ounces 1 can sweetened condensed milk (14 ounces) Skip the low-fat version for best results.
  • 0.5 cups 1/2 cup key lime juice Freshly squeezed will yield the best flavor.
  • to taste Fresh key lime slices, for garnish A touch of fresh goodness.
  • to taste Whipped cream, for garnish Optional, but highly recommended!

Preparation
  1. In a small bowl, combine graham cracker crumbs and melted butter. Mix until all crumbs are evenly coated and the mixture resembles wet sand.
  2. Firmly press the mixture into the bottom and up the sides of a 9-inch pie pan using the back of a measuring cup or your fingers. Ensure it’s packed tightly.
  3. In a large bowl, beat the cream cheese with a hand mixer on medium speed until smooth and creamy, about 2 minutes.
  4. Mix in the sweetened condensed milk and key lime juice until fully combined and silky.
  5. Pour the filling over the graham cracker crust, evenly spreading it out.
  6. Refrigerate until set, about 1 hour, or for deeper flavor, up to overnight.
  7. Just before serving, garnish with fresh key lime slices and a dollop of whipped cream. Enjoy!

Notes

Don’t skip the chilling step! It’s crucial for the pie to set properly. Best to use fresh ingredients for optimal flavor.
