Dressing Ingredients
  • 2 tbsp olive oil Extra virgin recommended for rich flavor.
  • 1 tbsp lemon juice Freshly squeezed is ideal for brightness.

Method
 

Preparation
  1. Wash and dry all your vegetables thoroughly to prevent moisture in the salad.
  2. Chop the mixed greens and add them to a large bowl.
  3. Add cherry tomatoes, cucumber, red onion, shredded carrots, corn, and olives to the bowl.
  4. Crumble feta cheese on top of the salad.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Drizzle the dressing over the salad and gently toss until everything is evenly coated.
  7. Serve immediately for the best freshness and crunch.
