  • 2 cups cooked spinach, chopped Fresh or frozen works; just ensure it's well-drained if using frozen.
  • 2 cloves garlic, minced Freshly minced garlic is a flavor powerhouse!
  • 1 cup shredded cheese (mozzarella, cheddar, or feta) Mozzarella provides a melt-in-your-mouth texture; feta adds a salty punch.
  • 1 tbsp fresh herbs, chopped (parsley, basil, or thyme) Fresh herbs elevate the dish, so choose based on your flavor preference.
  • to taste Salt and pepper Essential for enhancing flavors.
  • 2 tbsp olive oil Opt for extra virgin for the best quality.
  • 1 tsp paprika Adds color and a hint of smokiness.
  • 1 tsp garlic powder If you can’t get enough garlic flavor, add this too.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to about ½ inch thick between sheets of plastic wrap.
  3. In a medium bowl, combine cream cheese, cooked spinach, minced garlic, shredded cheese, and herbs. Season with salt and pepper and mix until well combined.
  4. Stuff each chicken breast with about ⅓ cup of the filling and roll tightly, securing with toothpicks or kitchen twine if necessary.
  5. Brush the outside of the chicken rolls with olive oil, then sprinkle with paprika, garlic powder, salt, and pepper.
  6. Bake in a baking dish for 25–30 minutes until the internal temperature reaches 165°F (74°C) and the chicken is browned.
  7. Let the chicken rest for 5–10 minutes before serving.

Notes

Make ahead by preparing the chicken and filling a day in advance. Leftovers can be stored in the fridge for up to 3 days.
