Preparation
- Preheat your oven to 375°F (190°C).
- Pound the chicken breasts to about ½ inch thick between sheets of plastic wrap.
- In a medium bowl, combine cream cheese, cooked spinach, minced garlic, shredded cheese, and herbs. Season with salt and pepper and mix until well combined.
- Stuff each chicken breast with about ⅓ cup of the filling and roll tightly, securing with toothpicks or kitchen twine if necessary.
- Brush the outside of the chicken rolls with olive oil, then sprinkle with paprika, garlic powder, salt, and pepper.
- Bake in a baking dish for 25–30 minutes until the internal temperature reaches 165°F (74°C) and the chicken is browned.
- Let the chicken rest for 5–10 minutes before serving.
Notes
Make ahead by preparing the chicken and filling a day in advance. Leftovers can be stored in the fridge for up to 3 days.
