Ingredients
  

For the Chicken
  • 1/4 cup fresh lemon juice freshly squeezed for best flavor
  • 2 tablespoons olive oil extra virgin is recommended
  • 2 cloves garlic, minced more if you’re a garlic lover
  • 2 teaspoons dried oregano or fresh oregano, if you have it
  • 1/2 teaspoon paprika for added color and subtle smokiness
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 pieces boneless, skinless chicken breasts preferably organic, about 6 ounces each
For the Sides
  • 1.5 pounds yellow potatoes, cut into 1-inch pieces Yukon gold works wonderfully
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt plus more to taste
  • 1 teaspoon black pepper plus more to taste

Method
 

Marinate the Chicken
  1. In a bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, paprika, salt, and black pepper until combined.
  2. Add the chicken breasts to the marinade, ensuring they are well coated. Marinate for at least 30 minutes (or overnight if you want more flavor).
Preheat the Oven
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
Roast the Chicken
  1. Place the marinated chicken on a sheet pan and roast in the oven for 25-30 minutes, or until the internal temperature reaches 165°F.
Prep the Potatoes
  1. Meanwhile, in a bowl, toss the yellow potatoes with olive oil, garlic powder, salt, and black pepper.
  2. Spread the seasoned potatoes on a separate baking sheet in a single layer. Roast for 30-35 minutes until golden and tender.
Serve and Enjoy
  1. Once the chicken is cooked and the potatoes are fork-tender, slice the chicken and serve alongside the roasted potatoes. Enjoy!

Notes

Let the chicken rest for 5 minutes post-roasting for juicier results! Use a meat thermometer for perfect cooking every time.
