Preparation
- Preheat your oven to 350 degrees F (175 degrees C). Line a 9x13 inch pan with parchment paper and give it a spritz with nonstick cooking spray.
- In a medium bowl, blend the butter, flour, and granulated sugar until crumbly. Press this mixture evenly into the prepared pan.
- Bake the crust for 23-25 minutes or until firm and golden.
- While the crust is baking, whisk together the sugar and flour in a medium bowl, then stir in the beaten eggs and lemon juice until smooth.
- Once the crust has cooled slightly, pour the lemon filling over it, and sprinkle fresh blueberries evenly.
Baking
- Return the pan to the oven and bake for an additional 28-30 minutes until the edges are golden, and the center is set yet jiggly.
- Remove from the oven and let the bars cool down at room temperature, then transfer to the fridge for at least 2 hours to chill.
- Dust the top with confectioners' sugar before serving. Cut into squares and enjoy!

Best served chilled for the perfect texture. Can be customized with different fruits like raspberries.
