Ingredients
  

For the Crust
  • 2 cups 2 cups all-purpose flour Use all-purpose flour for the best crumb.
  • 1 cup 1 cup unsalted butter, room temperature Room temperature butter is recommended for easy blending.
  • 1/2 cup 1/2 cup granulated sugar Granulated sugar adds sweetness to the crust.
For the Filling
  • 1 1/2 cups 1 1/2 cups granulated sugar Granulated sugar for sweetness.
  • 1/4 cup 1/4 cup all-purpose flour Used to thicken the filling.
  • 4 large 4 large eggs, beaten Room temperature eggs give good volume.
  • 2/3 cup 2/3 cup lemon juice, freshly squeezed Fresh lemon juice is essential for zest.
  • 1 1/2 cups 1 1/2 cups fresh blueberries Fresh blueberries recommended for best flavor.
  • Confectioners' sugar for dusting For an elegant finish.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C). Line a 9x13 inch pan with parchment paper and give it a spritz with nonstick cooking spray.
  2. In a medium bowl, blend the butter, flour, and granulated sugar until crumbly. Press this mixture evenly into the prepared pan.
  3. Bake the crust for 23-25 minutes or until firm and golden.
  4. While the crust is baking, whisk together the sugar and flour in a medium bowl, then stir in the beaten eggs and lemon juice until smooth.
  5. Once the crust has cooled slightly, pour the lemon filling over it, and sprinkle fresh blueberries evenly.
Baking
  1. Return the pan to the oven and bake for an additional 28-30 minutes until the edges are golden, and the center is set yet jiggly.
  2. Remove from the oven and let the bars cool down at room temperature, then transfer to the fridge for at least 2 hours to chill.
  3. Dust the top with confectioners' sugar before serving. Cut into squares and enjoy!

Notes

Best served chilled for the perfect texture. Can be customized with different fruits like raspberries.
