Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the softened cream cheese and butter together until very smooth and creamy, about 2-3 minutes.
- Add in the granulated sugar and mix until fully combined, scraping down the sides as needed.
- Gradually mix in the flour until the dough comes together, soft but not sticky.
- Stir in the vanilla extract until fully incorporated.
- On a lightly floured surface, roll out the dough to about 1/8-inch thickness.
- Cut the dough into squares, approximately 2 inches wide, and transfer them to the prepared baking sheet.
- Spoon about 1/2 teaspoon of jam into the center of each square, ensuring not to overfill.
- Fold each square’s corners toward the center to create packets and press gently to seal.
- Bake for 20-25 minutes, until the edges are lightly golden and the bottoms are set.
- Let cool on the baking sheet for a few minutes, then transfer them to a wire rack to finish cooling.
Notes
Kolacky Cookies can be stored in an airtight container for up to 2 days at room temperature or 7 days in the refrigerator. Freeze baked Kolacky for up to 3 months.
