  • 1 cup cream cheese (softened) Use full-fat cream cheese for the best flavor and texture.
  • 2 sticks unsalted butter (softened) Ensure the butter is at room temperature for easy mixing.
  • 2 cups all-purpose flour For best results, use a high-quality flour.
  • 1/2 cup granulated sugar Using organic sugar is recommended for a more natural taste.
  • 1 teaspoon vanilla extract Use pure vanilla extract for better flavor.
Filling Ingredients
  • 1/2 cup fruit jam (apricot, raspberry, or preferred flavor) Opt for high-quality fruit preserves.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the softened cream cheese and butter together until very smooth and creamy, about 2-3 minutes.
  3. Add in the granulated sugar and mix until fully combined, scraping down the sides as needed.
  4. Gradually mix in the flour until the dough comes together, soft but not sticky.
  5. Stir in the vanilla extract until fully incorporated.
  6. On a lightly floured surface, roll out the dough to about 1/8-inch thickness.
  7. Cut the dough into squares, approximately 2 inches wide, and transfer them to the prepared baking sheet.
  8. Spoon about 1/2 teaspoon of jam into the center of each square, ensuring not to overfill.
  9. Fold each square’s corners toward the center to create packets and press gently to seal.
  10. Bake for 20-25 minutes, until the edges are lightly golden and the bottoms are set.
  11. Let cool on the baking sheet for a few minutes, then transfer them to a wire rack to finish cooling.

Notes

Kolacky Cookies can be stored in an airtight container for up to 2 days at room temperature or 7 days in the refrigerator. Freeze baked Kolacky for up to 3 months.
