Prepare the Graham Cracker Mixture
- In a large mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until all the crumbs are well coated.

Make the Creamy Key Lime Filling
- In another large bowl, beat cream cheese with an electric mixer until smooth. Gradually add sweetened condensed milk, key lime juice, and lime zest. Continue beating until creamy and well combined.

Whip the Cream
- In a third mixing bowl, whip heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
- Common Mistake to Avoid: Don’t overbeat or the cream will turn grainy!
Build the Layers
- In a large trifle dish or individual glasses, start layering. Begin with one-third of the graham cracker mixture, add half of the key lime filling, followed by a layer of whipped cream. Repeat the layers finishing with a generous layer of whipped cream on top.
- Chef’s Tip: For a neat presentation, use a piping bag to layer the whipped cream!
Chill and Serve
- Garnish your trifle with additional lime zest. Chill in the refrigerator for at least 2 hours before serving.
- Timing Note: If you can let it chill overnight, you’ll get even better flavor.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. The layering may get a bit mushy, but it will still taste delightful. You can prep the graham cracker mixture and creamy filling a day in advance. Don't freeze as the texture may change.
