Ingredients
  

Graham Cracker Crust
  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted Make sure it’s at room temperature before melting for even consistency.
Creamy Filling
  • 8 ounces cream cheese, softened Philadelphia cream cheese yields the best results.
  • 14 ounces sweetened condensed milk
  • 1/2 cup key lime juice Fresh is ideal for that bright flavor, but bottled works fine too!
  • 1 tablespoon lime zest Freshly grated for the best aroma and flavor.
Whipped Topping
  • 2 cups heavy whipping cream Use high-fat cream for the best peaks.
  • 1/4 cup powdered sugar Sifted for creaminess.
  • 1 teaspoon vanilla extract

Method
 

Prepare the Graham Cracker Mixture
  1. In a large mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until all the crumbs are well coated.
  2. Chef’s Tip: Try using a food processor for finer crumbs if you prefer a smoother texture.
Make the Creamy Key Lime Filling
  1. In another large bowl, beat cream cheese with an electric mixer until smooth. Gradually add sweetened condensed milk, key lime juice, and lime zest. Continue beating until creamy and well combined.
  2. Visual Cue: It should hold soft peaks when you lift the beater.
Whip the Cream
  1. In a third mixing bowl, whip heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
  2. Common Mistake to Avoid: Don’t overbeat or the cream will turn grainy!
Build the Layers
  1. In a large trifle dish or individual glasses, start layering. Begin with one-third of the graham cracker mixture, add half of the key lime filling, followed by a layer of whipped cream. Repeat the layers finishing with a generous layer of whipped cream on top.
  2. Chef’s Tip: For a neat presentation, use a piping bag to layer the whipped cream!
Chill and Serve
  1. Garnish your trifle with additional lime zest. Chill in the refrigerator for at least 2 hours before serving.
  2. Timing Note: If you can let it chill overnight, you’ll get even better flavor.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. The layering may get a bit mushy, but it will still taste delightful. You can prep the graham cracker mixture and creamy filling a day in advance. Don't freeze as the texture may change.
