  • 1 teaspoon pure vanilla extract Always use pure for significant flavor difference.

Preparation
  1. Cut the avocados in half, remove the pit, and scoop the flesh into your blender.
  2. Pour in the cocoa powder, maple syrup (or honey), coconut milk, vanilla extract, and a pinch of salt.
  3. Blend the mixture on high until smooth and creamy; this should take about 1-2 minutes.
  4. Stop and taste your pudding. Feel free to add more sweetener or cocoa based on your preference. Blend again until combined.
  5. Transfer your pudding into individual serving bowls or a single container and refrigerate for at least 30 minutes to set.
  6. Top with fresh berries, a dollop of whipped coconut cream, or shaved dark chocolate before serving.

Notes

Over-blending can make the pudding too thin; stop when you achieve a creamy consistency. For the best flavor, use fresh ingredients.
